If it is dropping that much oil I'd have my "Indie" do a compression/leak down test. Then you would know if it is getting through the rings/guides, or a cylinder pushing through a bad head gasket. If you still have good compression and no leak down, consider re-torquing the head bolts (following the prescribed sequence and torque spec) when you replace the valve cover gaskets.
