Low Oil Pressure After Running Hot

I drove to work today and it ran hot (about 235 degrees). I added a full gallon of antifreeze/water when I got home from work. Now the oil pressure is low when idling (about 30), prior it was always around 40 at idle. I checked the oil and it is full. Could running hot break down the oil??? Should I do an oil change to see if that resolves the issue?

Vehicle: 2004 Chevy Tahoe 5.3 with just over 90k. Coolant was fully replaced in 2008 and the RP oil change has 3500 miles on it.

Changing the oil corrected the low oil pressure. Now I am trying to figure out why my coolant was down a gallon. If there is no obvious leak where do I start to look? I did inspect the oil and there was no water in the oil.

I would crawl under your rigs and check your hoses for leaks and also the botton of the waterpump!!
