The plastic is somewhat thick, as one would expect, so power tools will definitely work better.
The other issues with knives, is that if you slip up, while putting lots of pressure on the blade, you may end up cutting yourself badly. When I used the utility knife with new blades to cut the two short sides of the triangle, the blade slipped out of the groove and nicked my thumb on my other hand, which I was using close by for leverage. Fortunately, it was a nick, but another fraction of an inch in the blade's trajectory, would have sent me to the doctor for stitches.
Again, an easy job with the right tools and some caution.

Think I used a carpet knife.
Hardest part was unscrewing the fastener under the middle of the dash. I didn't put it back so I wouldn't have to deal with it when changing filters out. No issues with that. I'm on my second set of filters now. Works great.
Btw it did eventually get a little musty which is why I changed em out after about a year.

After you guys added the filter, did you notice a decrease of airflow coming out of the vents at all? I'm considering adding one to my Tahoe and also the SD.
Does the rear A/C unit have any sort of filter?

Yes, very slight decrease but noticeable. Not a big deal for me since it's on Auto all the time anyway, set at 66 or 68 all year round. No filter that I'm aware of out back, never noticed one in the diagrams. I reckon the design itself serves as the filter.
Close on the house yet?

Not yet unfortunately. With the virus sneaking around, my hours have been taking a beating at work. I make decent money, but with reduced income and paying such high rent.. saving is a little more difficult. I am being overly cautious with finances and making sure I retain my job before closing on a house. I feel like I'm in a lose/lose situation. I'm losing my ass paying almost $1800 for 900 sq/ft, but if I spend every last penny now on a down payment for a house...that could also be disastrous.
I just want life to go back to normal so I can have a house, AND finally make my hoe faster!!!!
I forgot to mention, I live near Boulder CO so houses are ******* ridiculous expensive!

Well, maybe you'll be able to negotiate for a reduced rent and if this drags out, home prices will sag putting you in a good position eventually. Funny thing, I've always maintained high stocks of food and supplies for the house but in the last few months have been drawing our stock down. Go figure. Now we'll go back to the way we used to do things; have to get a new freezer for the garage too.
