I have a 07 Tahoe LT with a 2/3 drop on it. What would be a good shock to put on the rear that could handle some weight??

Shocks technically do not handle weight. The springs do that, unless you have airride....then the provide supplemental load capacity.
Still the majority of the weight is on the springs, as it should be.
You want to run, or are you running extenders?
lohoe helper bags and your done. You can tow on them fine.
