My current set up consists of Two 12" Rockford Fogate Punch 1000's in a sealed box. The box is dual chamber and about 2 1/2 ft long by 1 1/2 ' high by 1 1/2' deep.

Its pretty loud, i like the sound it puts out but it takes up so much room.

Can i get the same amount of sound from doing say...a dual sub box setup. One on either side of my truck ?

Yeah. Do 1 nice ported truck box on each side just make sure its not to shallow for your subwoofers. This is how my setup is I'll take pictures tomorrow. I have P3D412 Rockford Fosgate Subs so were using pretty much the same stuff here I'm guessing.

i would go with 2 ported boxes tuned for your subs. or, have one built, or check out some local audio shops. they may have shallow mount dual ported boxes. knowing rockford, those subs are most likely shallow mount

i would go to rockfords web cite and see there enclosure info and see what cubic feet and sized those subs sound optimal in.
