I have an Alpine PDX 1.1000 and there is an input gain selector switch which I can set to 0.1 - 1.0v or 1.0 - 8.0v.

What is the output level of my stock headunit? I have a 2008 Tahoe with navi and bose system and I pulled it out and looked on the back for info but couldn't find anything.

I originally had it at 0.1 -1.0 and it bumps pretty hard with the gain all the way down. I then tried it at 1.0 - 8.0 and it doesn't hit as a hard. Which one should I set it to?

If it's fine at a low gain, then leave it at low. If you set the gain too high, you'll probably start clipping your subs (aka it's bad)

This is actually a different setting than the gain control, there's only two settings either 0.1 - 1.0v or 1.0 - 8.0v. I just need to know the output voltage of my stock HU so I can set it accordingly.
