i think you have to press those two tabs on the ends and then wiggle it back and forth like m3mphi57 said.

So all I need to do is cut the connector on the left and splice it with the connector that came with the new HU?

it depends. do you have bose? if so, you'll need an adapter which goes in between that plug and the wires from your new HU

So the guy at the local car audio place mentioned me needing to connect the unit to the parking brake. Do I really need to do this? It sounds like this prevents me from watching dvds while I'm driving, but I would like to do that anyway.

car audio shops are suppose to hook up the parking brake wire. (legal reasons) depending on the brand HU you have some of them you can just hook the parking brake wire up to the power wire , some you can get a bypass module from ebay. but either way it can be bypassed

It's a sony xav-60

I dont really care about doing this unless I have to. Would the HU not work if i didn't wire it to the parking brake wire?

This keeps getting more and more expensive.

So if I don't connect to the parking brake or use a relay to bypass that my headunit will not function at all?

I ordered the GMOS-04 adapter and I was hoping that was all I needed but I don't get that impression anymore

your head unit will work just connect it, i have an indash and didn't even have to ground the parking break wire and it plays dvds while i drive
just connect it to your wire harness and dont ground your parking break wire unless you need to.
(*not held responsible for tickets*) lol

no buy a 12 v relay and make sure the pins are 85 86 87 and 30
86 87 get grounded so do a loop ground take 86 and 87 connect together then one wire out and run to ground thats grounded to radio
85 blue remote wire
30 goes to e brake wire
