So all I need to do is cut the connector on the left and splice it with the connector that came with the new HU?

it depends. do you have bose? if so, you'll need an adapter which goes in between that plug and the wires from your new HU

I do have bose, and I found the adapter just haven' bought it yet. Once I have that adapter, it's plug and play correct?

So the guy at the local car audio place mentioned me needing to connect the unit to the parking brake. Do I really need to do this? It sounds like this prevents me from watching dvds while I'm driving, but I would like to do that anyway.
