Maybe, I gotta see what I wanna do. Do you think the plastic will hold up with the paint or it will be a pain in the ass?

The paint will hold up fine on plastic. Painting chrome is where chipping becomes a problem. Any shop that paints it should give you a long/lifetime warranty on the paint work, so you can't loose.
Painting the plastic will update the look of the truck big time. The new tahoe/yukon comes with painted bumpers. No plastic or chrome anymore.
Look at this link. I think it's the best looking black tahoe on the forum along with jkmotorsports.
