I want to replace the stock lower valance (air dam) to get more clearance on the front. Maybe add a skid plate(s). Anyone do this? If so, with what? Pics?

You can purchase the GM PPV airdam for $300+ . pn 23365760. Or you could trim your stock air dam.

GM also offers a metal skid plate. Check Chevy accessorries website. Retail is $250.00

Cutting down the factory valance is eazy-peazy. Easier and certainly cheaper than replacing with the 'shorty' GM unit. As mentioned elsewhere on this forum, use an oscillating saw and finish with a sanding block or, with practice on the sacrificial piece you can 'flame polish' the raw end vs. sanding.
I used two widths of 3/4" painters tape down from the top as a guide for cutting, but just experiment with what YOU like.

Used GM metal skid plates on eBay all the time - generally $50 ea.

Try trimming your factory one first as others suggested. Worst case you end up buying a PPV air dam anyways. I trimmed mine, added tow hooks and put on the factory 3 piece skid plate kit. You can find them relatively cheap online. I think brand new it was $160.
