Wheel/tire combo question

My parents picked up a 2000 z71 obs at an auction a couple of months back (I paid for it, don't worry) but the kicker was that it came with some ugly chrome 20s and a set of Wrangler HP 275/60R20s. Now that I've got the bank account back up I'm looking at replacing those wheels and tires with some Pro Comp 7032s and hopefully some Duratracs. I've been looking into sizes and decided on the 18x9 (5" backspace/0 offset) wheels and I'm stuck between the 295/65R18 and the 275/65R18 tires. Of what I've seen so far, the 285/75 seems to be about as big as you can go with a stock setup. The kicker is that the prior owner ran a wheel and tire shop and I can't quite tell if he did anything suspension-wise to it, it appears to have quite a bit of room. I would typically take the safe route and go with the smaller tire but I'm a fan of the more rugged, off-road inspired look. Any suggestions help, thanks!
