Fuel guage incorrect until restart?

I drove long distances without restarting tahoe (2001 z71 5.3 engine) for a roadtrip. I notice fuel guage was not moving as fast as it should in relation to miles on tank of gas.

Upon restarting the truck the guage read correctly. Any idea on what causes guage to read incorrextly and or how to correct it?
