I have a 2005 Tahoe. I'm not really 100% sure on what model because there's no letters on the side. I do have cloth, 4WD, and the dual zone climate up front with the levers that move up and down.
I'm wondering if the climate control from a z71, with the dual zone wheels will fit and work in my Tahoe.

Sorry if that sounds confusing, if it is please say where and I'll try and fix it.

No. You'd have to chance out the wiring harness, BCM, all kinds of electronics.

Would be cheaper to sell your Tahoe and get the Tahoe you want.

Not even if I got one from the same year tahoe?
I mean I already have dual zone climate right now, it would just be getting knobs instead if a lever basically.

Nope. It wouldn't work. You'd have to reprogram the BCM and add in missing temperature sensors and sunload sensors throughout the dash and headliner.
