I think the loss of back pressure might affect you MPG ever so slightly. However, your right foot might notice your mod and cause your MPG to substantially decrease.

A good bit because like sepiroth said, straight exhaust typically makes your foot a bit heavier. It will have the tendancy to drone a bit I bet. Ever considered an electronic cutout? That way it isn't always loud just when you "need" it

Not too bad. If you want loud but good sound with minimal "popping," go for no mufflers but keep your cats. Cats provide a significant amount of back pressure and will not hurt performance too awfully bad.
