I look at it before and during a long trip, but you usually won't see me under the hood at a gas station on a regular basis, plus I'm "that guy" who never shuts my truck off while fueling as well. Too many fuel pump jobs as a mechanic from hot pumps that were cold shocked at the gas station - just let er run. Sorry for the sidetrack.....
Back on topic: in my 2017 Denali with the 6.2L I've never used a drop of oil in between changes (5k) and it's at 119k as of today. I'd keep an eye on it since it's under warranty for sure.
My 2008 with the 6.2L doesn't BURN oil, but has some incontinence from the rear main seal that will drop the level a little after 5k.
