I have a Hypertech max tuner that has ALOT of great tuning options but I’m not sure what to pick? I have a 2018 Chevy Tahoe with the 5.3L V8 and the transmission was rebuilt with upgraded components. Obviously I tuned the V4 mode to off but there’s so much more. Throttle response, fuel type, shift firmness, shift points and etc. Looking for better performance but also longevity/reliability.

You want maximum throttle response. GM OE throttle response is so slow, that aftermarket pedal pumpers are a thing.
Which transmission was rebuilt with upgraded components? Was one of those components the valve body?
My offhand guess for the transmission:
gently increase shift firmness/quickness until each shift has a gentle pleasant bump.
GM OE softens most shifts so much to 'improve NVH', but this increases clutch slippage, which is wear.

Might help if you describe the menu as HyperTech describes it.
