I have a chance to get an cluster out of an 2002 Escalade. the information centre looks different. will the 2002 fit in my 2004 Taho ? and work normal?

No it is not interchangeable.
You would have to stay with in 2003- 2006 model years.

man that sucks. It's a nice looking cluster.
Can I take out the gage and use that ? just take the parts I need?

Nope. They are completely different. You can probably use the needles, but that's about it.
