make sure you have the correct thermostat installed. verify temp with a temp probe or ir gun at the thermostat housing while engine is and hosing is hot or with a scanner and put a converter back on there where it belongs. taking it off just causes problems. oh and it is a federal crime too.

Ran at 195 until I put in this all aluminum 3 row radiator, then it stops at about 180.

Mine at start up warms up to just over 210 and then immediatly drops to 150 - 160 and stays there

Na on his year cat doesnt do anything bad because the pcm doesnt care. As long as he isnt in an emmision state then its alright

Change/check the thermostat, it could be stuck open if it's a fail safe.
