What about the note of the exhaust and volume level? I want to keep it as quiet as possible.

The cats do lower the sound a little in both volume and pitch. It's a small amount and some can tell the difference, others can't. It this is a concern, replace the cats with some short glass pack mufflers ("Cherry Bombs").

My bet is it would be quieter than stock.

So what would explain the intermittent smell? It seems like if it was fuel or a cat that it'd do it all the time. Sometimes when I get out...I smell nothing. Sometimes it's quite strong.

The logic (even though I don't know exhausts) seems to point to something upstream. I get a strong fuel smell when the engine is running (rich?) at times too. Seems it's intermittent also.

You need a Tech-2 to turn the injectors on and off and same for the coils to find this problem. It can run other tests too.
