Which do you prefer? Escalade door handles or maroon door handles? Im leaning towards the stock handles.. I like the sleek look.

I agree. The solid maroon completes the monochromatic look. Very nice.

If you do more chrome, like the roof rack and such, do chrome handles. If not, do painted

Bumpers and grille are painted I say painted handles . If they were chrome I'd go with esky handles.
