After owning 5 of these trucks, I'd say stick with what you have. It's a great combo. If you're looking for more power/towing/mountain climbing, then I'd go with 3.73's. But, speaking from experience overlanding, I can say that the factory setup works well, even climbing 11k mountain passes on gravel roads. I will say though, that IF that was my main focus, I would do 3.73 gears. Other than that, I can't say anything bad about stock setup

What is a good rear end gear to change to for daily driver still like to travel out of town
Your Tahoe came with 3.42 or 3.73 gears assuming you have a 5.3 engine. 3.23 gears or 3.73 gears if you have the 4.8 motor.

If yours were mine and it had 3.42s, I might change the axles if they needed replacement to 3.73s. If it came with 3.73s, I'd leave it.
