in 1999 Gmc Yukon. What transmission fluid do you guys use? 5.8 Vortec

I run nothing but Mobil 1 products in my truck. DexVI meet's DEXIII requirements.

Are you doing a drain/fill and filter change or a having a flush done?

Dexron 3 officially. if you use anything newer make sure it carries the classification of being compatible like mobil does on their website. there should be a web page that distinctly says it will work.

Well, historically anyway. GM stopped licensing Dexron III at the end of 2006. Manufacturers may still be selling products labelled as "meeting requirements" or "compatible with" the Dex III requirements, but if it was produced after the end of GM's licensing agreements it cannot be labelled as Dexron III without risking action by GM to protect it's ownership of the name.

GM's official Dexron VI announcement is easy enough to find stating that Dex VI is the new official, backward compatible, specified fluid.
