Engine temp and gauge not the same

2017 LT 5.3 with the Primer digital gauge cluster

I've been using my scanner lately to monitor my trans temp (170's highway), because next week its going in to have the fluid changed and the updated bypass valve installed.

In doing this I discovered the coolant temp really low for an entire 4 hr drive in the 150's. I'm going to be installing a new t-stat this weekend.

Here is my question

Scanner reads 160 then t-stat opens and it goes down to 140, and will cycle as the stat opens and closes. IR temp gun on the head confirms that.

The gauge reads 180 ish but will rise and fall with the scanner. If the ECM is reading 140-160 why is the gauge not pegged to the bottom setting the SES light? This does not have 2 temp sensors does it? Again it has the Primer digital gauge cluster, so not actual gauges other then tach and speedo.
