20x8.5 +35mm offset

Would a 20" wheel with a 35mm offset be able to fit under a 2002 Yukon? My friend is selling his rockstars and I thought about snagging them but I'm afraid of fitment issues.

Well if you dont want to level it, i would say a 275/55/20 tire would look nice

So the extra 20mm going under my wheel well isn't going to rub?

It should not. This is the same tire on the stock 20's
