My 05 Yukon has been randomly stalling lately. Notice usually when accelerating the engine will cut off for a split second and then start running again. Scanned for codes and there’s no codes at all. At the same time the service stabilitrak light will pop on randomly for a split second and will turn back off. Still not getting any codes in the engine, transmission, or abs modules.

Mine used to threaten to do so as well, sometimes my engine would idle @ about 200RPM for a few seconds before fully recovering from enthusiastic driving.
Clean MAF (CAREFULLY / GENTLY!), clean throttle body thoroughly, and clean valvecovers with special attention to PCV passages.
Replace PCV valve that opens & closes with 12572717, which never closes. All that helped in my case.

If you tend to top off your fuel tank, that is really the foundational source of the problem though.
Running Chevron w/ Techron Fuel SYSTEM Cleaner (or anything else with Poly Ether Amines) at 2x strength before each oil & filter change might help,
but ultimately you (I) will need to replace several parts of the Charcoal Canister Evap-whatever system that have been misbehvaing.

Pics of the truck, please.

You are already receiving sage advice from the knowledgeable folks on this Forum.

If you are getting a 'service stabilitrack' trouble code, then in my experience, there should be a trouble code generated. What scanner are you using? If it is not a quality bi-directional scanner, then it won't be able to see all of the trouble codes that can be generated by the truck's systems. If not, I recommend that you get yourself a quality bi-directional scanner to add to your tool box. Then, you will be able to read ALL trouble codes, along with a brief explanation/pointer to the source of your issue. You can test many of the truck's electronic functions with the scanner, in order to determine the source of an issue. You will also be able to reset/delete trouble codes, after taking corrective action. You will literally save thousands of dollars in diagnostic and repair costs over the life of your truck, and you will most likely recoup the cost of the scanner within 1 year.
