This code is triggered when one or more modules on the CAN bus determine that the ABS module is sending out invalid data. The U0415 code can be caused by damaged wiring or poor connections, a bad ABS control module, or faulty ABS sensors.

I have the new thermostat and a Mishimoto trans cooler and my temp never exceeds 160 degrees even in 115 degree Arizona summer. Not the cheapest cooler but by far the most solid plug and play custom I've seen. Before the thermostat change and cooler addition it was always at 194 - 210+.

A scan tool is the best way to make sure your gauge is good, if good then water pump, thermostat or clogged coolant system would be the logical next choice. You've already changed the thermostat so I would be looking at a pump.
Use a scan tool and see what temp the ECM is reading , gauges in these trucks can be way off. One other thing, you could have a bad water pump. But I would go the scan tool route first.
I know there is an updated 6 speed trans fluid thermostat that lowers the fluid temp about 45 degrees, not sure with the 8 speed. My 2016 6 speed never gets higher than 165 ( previously was 204+) with the updated fluid thermostat
I would put your vehicle on level ground and try again. The entire end of the stick should be covered between the lower and upper marks. Pull the stick first, wipe it clean and reinsert for a fresh dip. Your picture makes the oil appear blotchy on the stick.

Generally the oil is a solid consistency on the stick, I wouldn't consider that reading a good one. If you are indeed down a quart in 2K you really don't have a problem that anyone would consider bad with that many miles. At nine years old you don't have a car in the fight.
No such thing as a paid extended warranty, just insurance policies written to screw you over. Warranties are free. Insurance policies are made to keep money in the insurance co. pockets. If you want a service contract, purchase only a manufacturer backed policies, no third party contracts.
