    Looking at your sig, assuming it's the 2003 Yukon, it could be the mechanical cooling fan. Engine compartment is heating up while sitting with the A/C on. When you take off, that fan is running at full speed until the engine compartment cools down a bit. Sounds like an airplane taking off...
