Has anyone noticed an almost clunky oversteer? When I'm driving off of exit ramps, the steering seems to slightly "lurch" right or left, depending of my direction of travel.

Never noticed that on my 2015. I had the fancy wheels and 4x4. It handled well.

how old are your shocks
when i got my tahoe it was due for new shocks and it also had some squirrelly irratic steering wich i didnt think was related to the worn out shocks untill i put new schocks on and i didnt realize how many symptoms old worn out shocks can cause aside from an extremely bouncy ride i was having to brake hard it had bad body roll and the steering was really loose and it would wanna follow any groove or seem in the road

It's a 2015, 5 months old, taking it to dealer next week.
