Your situation is unique and not many have the access to that sort of specialty shop. The average 'Joe' taking his vehicle to Les Scwhab or the dealer wont' often find that level of expertise.
They only a little more expensive, but...
when you're able, I recommend upgrading to the Rancho S9000XL since they are even better than FOX in cold temps. I live in Alaska and keep them on the 5-7 settings depending on what I'm doing but they are rock solid, even better than the Bilsteins.

I have done this in the past on my 06 Denali.
Here is what I did and what I experienced as the results of doing a 3" leveling kit:
1. I stripped all the Auto-ride out including the compressor.
2. I replaced the stock key with a Supreme Suspension 3" lift/level key
3. I installed Bilstein 5100...
Agreed. Currently running those on my 06 Denali atm. Only gets to -20 for short stints here in Anchorage, AK, but no issues with them and the ride is legendary!
A brief note regarding the Rough Country 6" lift. The lower control arms don't align well with the stock bump stops and the front end will ride on smashed (not compressed...smashed to about 1.5 inches).
So even though I have technically gained suspension travel, with the Rough Country you lose...
Only for two reasons: 1. you simply want new ones....2. the stock ones are damaged/need to be R2.
Otherwise no, you can use the stock ones.
I used a 1.5" Supreme Suspension lift block under mine when I did it and it was too high; a 1" lift block would put you around 2-2.5" lift in the rear...
Truck is level and the angles are near stock due to the 6" lift. I haven't made any adjustments to the torsion keys but I didn't even think about that after getting the lift. My only two options seem to be cutting the JOUNCE stops and/or fine tuning the torsion keys.
In the rear, I plan on...

Don't do a level...period. At the tire range your going to the tires are too expensive to use a leveling with, it throws off your suspension angles, ruins the outside tire tread, and dramatically shortens the life of your ball joints (speaking from experience unfortunately).
Pay the money for a...
So I wanted to make the wisest choice when choosing how to utilize my tax money the gov sent back to me for round 1 of the "Economic Recovery"; so of course I chose to put a 6" lift on my 06 Yukon Denali. I know of no better way to use tax monies.
So here's the issue...
Job finished in Feb and...
Sorry but you won't fit 35" tires on a stock 06 Yukon Denali (I have the same year/model). The only way to fit 35" tires is to install a 6" lift and new front driveline. Even with a 3" leveling kit that includes an upgraded torsion key and lift blocks, you still won't fit 35's.
Agreed. Trimming or get a new custom front bumper; 35's just won't fit w/o at least a 6" lift. I have 33" Toyo's that barely fit (with trimming) on a 3" level kit yet the rubbing was really bad and...destructive.
Totally agree on the wheels needing to go.
I have the same year (06) Yukon. After I did the engine work, intake and exhaust, the tires and wheels were the very next thing to get addressed.
I went with a basic steel, D window gloss black then painted the center caps and put on black lug nuts. I...
I have an 06 Denali, 130K when I bought it and the rear Arnott autoride air shocks had just been replaced prior to purchase. They are new and are still total sh*t IMHO.
It's also funny, Konvict replied with the Bilstein 5100 recommendation and I just recently put those into my Summit wishlist...
