a Very simple way to check if your cats are clogged is with a vacuum gauge connected to your intake manifold. Doesn’t even involve you driving the vehicle.
@Mayne, check for corrosion in the connector behind the driver left foot kick panel and report back with your findings please... check very close for any corrosion aka little green crustys!
Just disconnect the negative battery terminal for at least ten minutes and you’ll be golden brother. It’s just a couple locking tabs on the sides and it pops right out.
Disconnect the battery. Use a tiny screw driver and pop them. Then come back and remove the airbag from the steering wheel. You’ll have to reroute the wiring harness from the steering wheel controls to give more slack for connecting and installing the new controls.
I would just double check the heat shields. Harder on the throttle means more heat... it’s possible you just popped a weld for the heat shield. Just my two cents.
Possibly a horrible vacuum leak, maybe purge solenoid stuck open... hopefully something along those lines that will be a quick easy and less painful to the wallet fix. Let us know brother.

You gotta torque the intake manifold bolts on the 5.7 in sequence and in three steps. If you didn’t do it in the three steps then they’re not gonna tighten evenly and you’ll end up with some loose manifold bolts.
