I agree on water pump. Don't plan any long trips until you get it fixed too. This might be a bearing failing. When it goes you might be without engine coolant until you get it fixed.

Ditto. I also put a little grease in the hardware too. I ended up WD40 overspray on the leather and grease in the carpet.

I've only done drive shafts and u-joints on my jeep. You can't pull the jokes and the u-joints have clips on the outside. I'm afraid to pull my rear if I have to mess with those clips behind my transmission.

I bought a similar rig a few months ago. It's also an 02 Escalade with the 5.3. It's more than enough power and I get fairly good gas mileage (around 17). You'll notice a big difference when you get that interior cleaned. Mine detailed almost back to a new truck.

I second this method. It was extremely simple. My only variation was that I used around 16 quarts and pumped it in fairly fast with a bucket pump. I had my wife turning it on and off. It really only took about 20 minutes. Was a cheap and easy preventive maintenance.
I use the cheapest oil. I believe staying on top of the oil changes (especially in axles, transmissions and transfer cases) is more important than brand. I'll even run cheap Valvoline or AutoZone brand in the BMW which "requires" expensive synthetic.

I think the general idea is to get good oil on the metal surfaces. I think all the other decisions have little impact. I think your plan is good if not over the top. I'd just fill until it starts coming out and don't tighten the bolts so much that it warps the cover. It should be great.

This is a real risk. I've converted a rear drum axle to discs. It can male it hairy. Brakes are often over looked and under valued, yet brakes can make a huge difference in most accidents.

You might be able to find a Dana 60 or 70 that suits your purposes too. Measure the width of your axle and start checking the axle bibles on sites like Pirate4x4. These axle swaps are extremely common in the offroading community. You can probably find a good heavy axle for $200 or so.
I recommend ordering a $15 Bluetooth scanner and buying the Torque app for your Android phone. It scans and can clear the codes. It even gives you links to to possible causes of unusual issues (like bad battery causing sensor error).
