rear brakes locking & heating up

Hello all I have a 00 Denali (99 bodystyle) recently I changed the rear drums, shoes, and brake hardware. Bled the brakes to get the air out but for about a month now I've been having this annoying problem where the brakes stick/lock up enough to make the wheels skid and make noise. The rear passenger is the one that I've watched lock up, you can also smell the burning smell from the brakes heating up. I've loosened the adjustment on it still same issue. Any help?
