My 2000 Tahoe LS 4x4 has a Medium Grey trim interior (seats are tan). Is it possible to paint them Medium Tan? Or am I gonna have to stalk the junkyard for the next few months to get the Medium Tan trim?

I would considering vinyl wrapping them before I considered painting... A junkyard donor still maybe the cheapest option.

But then there's still the matter of figuring out how to remove all the electronics and stuff for the swap.

I think I'll go with vinyl wrapping.

It might be easier to get new leather for your seats to match your trim. Good luck either way.
