Engine temperature gauge vs Torque App

Looking for those that use the Torque App.
On my 2015 6.2L the temp gauge gets up to operating temperature of 190F. It stays there on these cool days here in winter. I was watching my gauges on the Torque App and the engine temp gauge reads 168F when the instrument cluster is at 190F.
Thoughts on this and where the Denali is getting its reading from and where the App is getting its reading from?
SUV is supercharged and BB tuned.
