Brake knocking sound?

All new brakes on our 1999 Tahoe about 3,000 miles ago (calipers, drums, rotors, shoes, pads). Ever since then, whenever the truck sits for at least a few hours and the brae pedal is first applied, there is this "knock" sound that seems to be coming from the driver's side brake. It only happens once and then not again until it sits for awhile. My first guess is a caliper pin or something? No matter how hard or soft I press the pedal initially, this knock sound happens every time.

I would look at the assembly and bump things with a rubber hammer to see what is moving around after it sits. Maybe the caliper has a stiction issue with the caliper pins.
