They can do everything in a traditional tune they can do in a person tune. But, They can't get it exact to your truck parameters because there is no Data-logging involved.

There is no need to do "data logging" when getting an inperson tune, as Justin is monitoring all the info on the fly as you drive. It is all the same parameters being monitored whether you do the inperson or the cable tune, but you get a chance to see what Justin is changing when getting an inperson tune.
