My last trip was 280 miles and I didn't bother bringing extra fuel. I can carry 10 gallons in my rear rack if needed. I have been thinking about cutting the rear cross member above the spare tire and putting in a new cross member to make room for a 15 to 20 gallon transfer tank back there.
Skid plates wont be necessary if it isn't going rock crawling. There are companies that make the bumpers.

Mine is a very capable 2011 and it can be done for less than $20 grand. There are some companies still that build bumpers and winch mounts for these. My airbags are still working and at 175,000 everything is still working fine.

IFS and Tahoe's work fine for overlanding... They are very capable off road at least the pre 2014 models are. I run a 4 inch lift with 35 tires and nothing has stopped it yet. My last trip was 380 miles and 250 miles of it was off pavement and off road. I did have to pull a Rubicon jeep out...

I lifted mine with a farm jack on the hitch and my steel bumper flexed the frame enough to crack my rear tail light.. It moved about 1/2 inch... For the back end I just lift the differential and toss jack stands under there...

My other problem now is with the 35x12.5x17 tires they sometime hit the back side of the fender well when making a downhill turn. I think I will need to cut out the fender well so get better clearance or lift it another couple inches...
I am running a Fab4 on mine but, if you can find a good fabricator you might be able to get what you want in a bumper and a swing out for the same price... I think my rear Fab4 was almost $3,000 from a local rip off artist... lol
