Will rims from a GMC Sierra 1500 2014-2018 fit on a 2005 Yukon 2WD SLT? TIA

Yes, they should, depending on which wheel option you are considering. I run 18x8.5 wheels from a 2015 Silverado on my '04 Tahoe LT, with the OE Silverado size tires 265/65-18. They're slightly taller and the wheel offset compensates for the difference in tire width.
