Since I have installed my K/N cold air intake it has caused my IAT to go up nearing 200* which causes my truck to run badly and not start sometimes.

Sorry to hear that. Jist a question, what does IAT stand for? I have not seen that or heard that before.

Intake air temperature.
The problem with those kits is that they are open to the engine compartment. The factory kit is sealed off to everything except the fender area which shields it from the under hood engine heat. IMHO you are better off with the factory unit.

K&N and any other oiled air filters can often be over oiled. That oil can coat sensors like the MAF and IAT. An oil coated sensor will often give erroneous values.

Really sorry trying not to laugh here. The best "cold air intake" is your stock one.
