The 2500 stall works really well with this cam. It really starts to pull hard around 3000 rpms

Curious what you did for throttle body? Larger one?
It’s the BBK 80mm with the drive by wire. It’s available at Summit Racing. This was the biggest three bolt drive by wire throttle body that was at a reasonable price

It's crazy how much more aggressive yours sounds compared to mine. My cam specs are 216/224 551/551 lsa115+3. I have more lift and you have more duration with smaller lsa but with a 6.0. I thinks it's your smaller lsa that gives you so much chop, but it usually shifts the power band up. Still trying to learn to speak cam lol.

Post up a dyno sheet if you get one.

I think the duration is what will give you that choppy sound regardless of the lift. I could be wrong

Intake duration + Exaust duration, divided by 4, - LSA, x 2...calculate overĺap..The bigger overlap, the more lope..

Mine comes out to -10 or -16 depending on using the 3 deg advance ground into my cam vs -2 for yours which means a mean idle for you lol. Mine has less overlap, but is also boost friendly.
