ac get on and off

I have a GMC Yukon 01
Having problem with the ac

Since last year the ac light gets on only when I go above 50 mph for one mile then its whose working till I turned off the car and if I turned it off the ac its will get on back right away sometimes if I turn on the car right away like after taking gas its whose do working right away but when I shout down the car for a longer period its won’t get on until after a mile on high speed

Lately its get on very late like last time its get on after 25 miles and I finish my trip after 2 miles and when I drove back its getting on after 1 or 2 miles and also lately its getting on and off even riding on the highway
Meanwhile I changed already compressor (a used one)

also going to my mechanic and he did a Freon recharge then he tested the relay and also tested with a jump switch but nothing also I changed the climate control panel and the sensor on the roof above the driver and also I change the sensor in the front of the grill
And nothing change
So can you figure it out???
