OEM tire sizes are all going to be about the same overall diameter. You could look up the load rating for the tire compared to your stock tires and see if it still keeps your GVWR but again they shouldn't be that much different.
The max tow Silverados come with the 20" wheels and Goodyear...

I'd bet money that Walker is the OEM who made the muffler which came on your truck from the factory.
Tenneco owns Walker, and Tenneco also owns Rancho, another OEM part maker that you might find on GM Trucks/SUV
Remember that the Z71 package uses a completely different setup than the other trucks. You either get the NIVOMAT shocks or the auto-leveling with air setups. So the springs are different as well, not just the shocks.
Really doubt they ride 2" higher (if anything over 0.5" or so) than the other...
Buy the Bilsteins, set the front to full height, get the Daystar 3/4" spacer for the rear. If you have nivomat rear shocks get a set of factory Moog springs too.
That shouldn't run you more than $400 to buy and another $300 for install/alignment
