Can do true duals with either one. The header style has nothing to do with the style of system after the collectors.

you will gain more from long tube headers as stated. to answer your question yes there isnt a problem with dual exhaust off shortie headers. i had a truck a while ago that was cheaper to replace the manifold with headers. since i was trying to fix it cheaper running long tubes is more expensive to buy and setup an exhaust after. so i went with shorties to solve my exhaust leak and later i decided i want it louder and went dual with flowmaster 40s.

Do they make long tubes that I can use all my 02 sensors

Most headers have one O2 connection per side, the muffler shop can add the 2nd one after the cats. This set up would allow you to keep the four O2 sensors.

I'm running only the front O2 sensors on 03 Silverado SS, I had the tuner turn off the rear O2 sensors and the truck still passes the smog/emission test here in Houston.

American Racing and Kooks make longtubes and y-pipes with high flow cats or in the case of my Denali they make headers with dual pipes that have cats and connect to the stock system which goes dual to the muffler to a single out of the muffler. With 4 O2 bungs.

Mark,
What brand headers are you running on the Denali?
