2005 Escalade ESV, cooling fan issue?

I drive a 9/2004 Escalade ESV for work (6 liter, 194k miles, AWD). Incidentally, I own a 9/2004 Suburban Z71 (5.3, 177k miles, 4WD). The escalade is what I need help with.

I have noticed that, in stop and go traffic, the escalade will go above 210 indicated temps, unless I turn on AC, whereupon the temps will go to slightly below 210. I am going to assume that this means that the cooling fans get turned on by the AC being switched on. I'm assuming they also should be switched on by a coolant temp switch, which apparently isn't doing so. Where would this switch be located?

I've worked extensively on E30 and E36 BMWs and I know where to find this stuff on them lol. I have no idea where to look for them on this escalade. I do not see them on the radiator anywhere.

Its connected to the head above the spark plug on drivers side front. May be hidden in that clump of stuff above where you check the PS fluid

Did replacing the switch fix it or was it the relay? I have the same problem. Thank you search function.

In my case I'm going off the temp gage on the dash, it goes north of center when I'm sitting in traffic and I never let it keep creeping up to see how hot it will go. When I turn on the A/C it cools back down and I can feel the hot air blowing on my hand out the window.
Iirc fans don't turn on until 225

How are you measuing Temps?
