Don't know anything about your PAC, but the mic plugs in via the headphone jack. It's a 3 post terminal (left, right, microphone)

The tablet has an automatic dimmer that dims when it gets dark in the truck. Dimming/brightness has never been an issue

You will have to make some cuts to your dash to get the ipad mini to fit. Even then, it wont look like it belongs. Its a weird shape (not 16x9).

Yes, but you would need an aftermarket amp to power your speakers. The Bose system has an amp in the center console. I believe the non-Bose systems are powered through the stock head unit.

I dont know of a way to add a USP port, but the tablet has a MicroSD card slot. I have a 32gb card in there with music and a few movies. I read that the 32gb is the biggest you can go.
An 8" tab might be too big. I know the iPad mini is WAY too big to fit without cutting up the dash and it's less than 8". I tried the iPad mini before I installed the Samsung.
I only have a subwoofer amp. I am using a line output converter spliced into the speaker wires feeding the factory sub under the center console.
You could use another RCA splitter and run more RCAs to another amp.
