Just curious if anyone knows if there is a way to change the SIM card in a 17" Tahoe to a Verizon SIM. Or are we stuck with ATT ?

Its AT&T based....
AT&T is providing the service (could be any cell phone company if allowed)
But the actual hardware in the vehicle, is this a sim like your phone? or an e-sim that is part of the Onstar hardware? New Applewatches (Series 3 uses an e-sim)
if it's an e-sim I doubt you'll ever be able to switch providers (AT&T to T-mobile or Verizon) unless Onstar changes their provider
Aas of 2015 Onstar is using AT&T to make the whole Onstar system work)

It uses AT&T. However when out of cell tower range it works via satellite so not sure you can swap anything.

The phone service and OnStar does not work via satellite when out of range of a cell tower. GM switched over from Verizon in the 2014 on the 2015 model vehicles. Anything before that still uses Verizon.
