Continual coolant leak.
We have a 2001 Yukon XL that had a similar problem as you described. I replaced the water pump, could never find any leaks, but it was always down a little bit. Then it got worse and needed more coolant each week. I finally pulled the valve covers off and found that the heads had hairline cracks...- Dan Devine
