With the wheel base being longer the Suburban/XL/EXT models have different mounting points (since the wheel wells don’t go up right under the seat like they do in the Tahoe/Yukon/Esky)

I would start by removing both seats. The console itself just take your time snapping the cupholder section off and the face wear the clock is on the Esky models also snaps off (carefully). Disconnect the electronic options from it and slowly remove. It’s pretty simple was you get into it
The 03+ Tahoe/Yukon/Esky steering wheel is much different 00-02 if I'm not mistaken. I believe the electronics side of it would be hard to make functional, but I could be wrong.

Well haven’t had any progress to update for a while... still haven’t found the rear captains chairs and it’s also been well below freezing for the past month, doesn’t look like it’ll let up anytime soon either so the projects been put on hold for now. Damn I need a heated garage!
I haven’t found my rear seats still, but I did get my second Denali console shipped in! $94 shipped, not a bad price for a full console with everything on it!
I’ll have to send a email his way after i get some pieces ready, I’ll be needing the rear console upper piece redone since it’ll have to get cut down a little along with door pieces and possibly a few other little things.

I was originally planning on getting the Esky wood grain pieces in the doors re-trimmed to match the Denali wood grain but I’m thinking I’m going to paint them with the same grey and see how it turns out.
