With that said, where should a 350 TBI be running at in terms of coolant temp? 180 degrees seems low compared to everyone else I’ve heard saying it should be 200-210 degrees. Gauge is probably not 100% accurate.

That makes me feel a bit better, but keep in mind this is not the Vortec motor. I know those tend to sit at a lower temp. I was always under the impression that it should sit at 200-210 constantly, which is where I thought it was before the work was done.

So just to clarify, it is unlikely that it is the actual thermostat at this point? Air in the system is most likely what is causing it to heat up that hot initially? I could just buy a gallon of coolant myself and bleed the system. As long as it is a universal coolant I should be fine?
Just an update here. My father took the truck back to the shop that did the coolant flush and thermostat change. I guess they bleed the system. The coolant temp gauge is much more stable now, but it seems to open around 230 degrees when the truck is totally cold, it will then drop to about 160...
Update: I finally found a reputable guy that does all kinds of custom exhaust work on the side. He can fix the issue no problem, also gave me the option of deleting the cat. Can someone tell me the factory diameter for the piping in to and out of the cat? What about the headers and y-pipe? Thank...

Thanks for the info. I actually double-checked and it does in fact turn off. This was a brand new AC Delco unit. The original one was in the truck, lasted 23 years! It just seems to turn off a bit later than the other one, but no big deal as long as it doesn't burn anything out.
I forgot to mention that there is also a very small hole in the cat itself. At least they found that. I saw and felt it for myself. So, not sure if I should just go ahead and buy a Y-pipe and cat or just leave as is.
Oh, another issue. I don't have the hardware to bolt the flanges together. The bolts from the cat were not there when I purchased the truck. It had just been welded instead of bolted. So, I will have to come up with hardware as well.
