What's the difference?

Either way, the torsion bar itself is taking all the stress.

If I want to lift the front, I can get just about 2 - 2 1/4" by cranking the stock bars up. What would I benefit from by using the 2-3" lift keys?

lift keys allow you to crank the torsion bars further, it still adds just as much and more stress to crank more than the stock keys.

other then spending the extra money, no real benefit. unless your torsion bars have sagged over the years. as was said above, it still puts the same amount of stress, their just indexed to allow more lift.
